One of my favorites has to be the shift between the fairly mundane mine shaft music in the Deadmines and the sudden explosion of sound when you reach VanCleef's ship.

I'll never forget the first time I got there.

It was the music I heard right after I stepped through the dark portal, I wanted to go to Outlands that much.

Toss up: Tanaris shoreline and The Path of Glory in Hellfire Peninsula. The latter uses the beginning of the "Illidan" track from the soundtrack whenever you enter it, and it's both awe-inspiring and foreboding. I can't wait for WotLK, if only for another soundtrack!

I wondered this same thing. I often listen for the faint fading sound of a stealthed person so that I know to use an aoe spell. It has saved me many times.

It's the track that plays in the undead taverns and Lament of the Highborne. While I love all of the music, those two stand out.

I know of many people saying they just want to sit in Karazhan just to listen to the music as well. :)

I would have to say my favorite is the music in BT. I love how it changes from a the violins to something with a higher tempo, it goes great for when you get into a boss battle and its upbeat.
