So, there was a thread like this for 2.2 and I found it very interesting.
Basically, list any stealth Nerfs/Buffs ; Any changes that weren't in the Official Patch Notes and I'll edit this post to list them.
I'm not at home right now, so I can't confirm things. If you see something someone else has said, and can confirm it, please do so.
General
Graphical/UI
Classes are now colored in the Guild Roster page
Interactive items in the world now have a glow around them to make them more obvious. Eg. Herbs
Questgivers now show up on your minimap as "!"
Proffessions
Mining
Motes of Earth can now be put into mining bags.
JewelCrafting
Mercurial Stone can now be put into Gem Bags.
Cooking
Recipes that once enabled a person to get to 300 before going grey now do not.
Mounts
There has been a change to the purple glow effect on Netherdrakes. It now trails behind the mount.
World Environment
Boats and Zeppelins that carry players are now populated with NPC crews, some of which are vendors.
The boat between Teldrassil and Darkshore, and the one between the Forgotten Coast and Feathermoon Stronghold now use the night elf ship model, rather than the human ship model.
Sound
Night elf and Dwarven inns have new music added.
Karazhan has 14 new soundtracks for different parts of the dungeon.
The Temple Of The Moon in Darnassuss has had it's music changed.
The "Sound at Character" option has been removed from sound settings. It is on by default now.
Items
Dartol's Rod of Transformation can no longer be cast when moving.
MSD Buff is now lasting 5 seconds as opposed to 10 seconds.
MSD now affects Evocation
Instances
Hellfire Citadel : Heroic Ramparts
The Vazruden/Nazan chest in Heroic Hellfire Ramparts is bugged.
If all the item rolls are decided and the chest becomes "empty", the chest despawns. People who didn't opened it before all the rolls got decided won't be able to loot their Badges of Justice.
Tempest Keep : Heroic Mech
Same Problem as in HFC: HRamparts.
Classes
Hunters
Dead zone has been removed. Hunters range is now 5-35 (41 with talents) yards.
It seems that it is no longer possible for a Hunter to have Freezing trap applied to 2 or more targets at the same time.
Priests
On-damaged effects, such as Prayer of Mending, will no longer proc on periodic damage that is absorbed.

Q u o t e: IF a boomkin or shadow priest accidentally clicks on an ability that can not be used in those forms, it's removing them from their form to cast it.
not sure if it was like that before, but a few SP and a boomkin in our guild just started complaining about it.
You can turn this off with an Autoshift command. Its in the patch notes.
Q u o t e: Human racial is supposed to be 1% crit with maces and swords, but tooltip is displaying 5 Weapon expertise.
Intended. Was changed on PTR but not on the patch notes it would seem.

The change to racials was mentioned (As some of them) To "Avoid some players gaining excessive amounts of expertise".

Das ist neiche leiben falsch. It is not even wrong. The idea presented was so wrong that it couldn't even be proven as wrong given the current information. Also covers extremely stupid posts.
The question here is whether they don't understand that they're supposed to be looking for undocumented changes, or whether their reading of the patch notes was so haphazard that they just missed these items.
